Melani Shaum - Lagier Ranch Sour Cherry Pie

(Lagier Ranch is located in Escalou, CA.  Melani’s husband drove 700 miles roundtrip to get the cherries for her award winning pie!)

1 ½ C all-purpose flour

¼ t salt

6 oz. diced chilled unsalted butter

½ C ice water

½ C cake flour

2 T sugar

1/3 C chilled vegetable shortening, diced

Combine flours, salt, sugar and butter in a food processor; pulse 5-6 times.  Add chilled vegetable shortening.  With the machine running, add ice water through the feed tube and pulse 2-3 times.  Turn dough out and blend briefly with heel of hand.  Divide, wrap and chill.  Makes a double crust.

8 C sour cherries

2 2/3 C sugar

5 1/3 T tapioca or tapioca four

½ t almond extract

Line a pie pan with a rolled crust.  Combine the cherries, tapioca, sugar and extract and let stand 5 minutes.  Pour into the prepared pan and cover with a lattice top crust.  Sugar the pie lightly.  Bake on a pre-heated sheet at 450° F for 10-15 minutes, then 350° F for 30-40 minutes more.  Makes an 11 inch pie.
